This role steers the chef de rangs and commis waiters in a busy section through successful service shifts. On quiet nights we may expect you to work a section alone.
You to be a clear focussed and competent mentor who can instantly spot when standards are not being followed and drive the team to meet the expectations set down in the operations manual You will ensure your section has everything it needs to deliver effective and consistent service. You may lead team briefings, train junior staff members and report to the operational management team.
The role is all about delivering and maintaining the operational underpinnings which guide our services, understanding the daily demands of the operation and ensuring that waiters and the support team are fulfilling their job descriptions. You will collaborate with the Training Manager to deliver on-shift training to ensure everyone in the team knows what we expect and has the ability to deliver. We will train you in this standard.
Package value is £26,000 - £28,000 per annum which includes tronc and is based on a full-time working week (circa 40-45 hours). Pay is hourly so all hours worked over this will be paid.

Bistrotheque — amongst other things — is be a place to eat, drink and meet. The Head Waiter will help oversee the various team members who are different in their roles, united in their efficiency and guided by the clarity of a regularly reviewed and updated operations manual which is your road map.
